Athletics is a very important skill that allows you to regenerate health during combat, carry more items, reload weapons while running, and much more.
Athletics is one of the subcategories of strength. Each level of strength (starting from 3) will add 5 to health points (and also gives other bonuses).

To improve your athletic skills, open the character menu and go to the "Strength" attribute. In this sub-menu, select the Athletics tab to see the skill tree where you can unlock specific perks upgraded with skill points.
