Unlike the first part of the game, where you could shoot at nests with arrows, Kingdom Come: Deliverance 2 has a new mechanic. Now, while in stealth mode, you can throw stones by pressing the G key (default).
However, there is a nuance: you cannot just aim at the nest. The game limits your aiming to create more realistic physics. You need to back up a certain distance and throw rocks until you find the right angle. If necessary, aim slightly to the left or right, as there is a horizontal spread.
After you have knocked down a nest, approach it and press the action key (E). Inside, you will find various small items. These can be trinkets, eggs, lockpicks, badges, sword parts, and even jewelry.
