At this point, the tortoise shell seems useless. In The Forest, collecting shells allowed you to create a water trap, an incredibly useful survival tool. By propping up an overturned shell on branches, you could store fresh rainwater and dew. It could have been used as a source of water for drinking or stored in a wineskin prior to caving in a cave.
Sons of the Forest doesn't offer that option - yet. At the moment, you can only feast on turtle meat. Since this is an early access game, there is a good chance that projectiles will come in handy later in the development of Sons of the Forest.
At the moment, there is no particular reason to kill reptilian friends.
The success of the title is quite expected.
